Specialty coffee is ordinary coffee with nothing hidden: every step done carefully, measured, and traceable to the person who did it. Here is the whole journey, painted plainly.

Where it grows
Wayanad, Idukki and Palakkad, on the western slopes of the Western Ghats.
Elevation
Roughly 700 to 1,600 metres, with the highest farms in Idukki.
Varieties
Mostly robusta; arabica at higher elevations; small plantings of excelsa and liberica.
Shade
Grown under jackfruit, silver oak and pepper vines — never in full sun.
Harvest
November to March. Arabica ripens first, robusta follows.
Processing
Washed, natural, honey and anaerobic, then dried on raised beds and milled.

It starts as a fruit on a tree.

Coffee is a cherry, grown under shade in the Western Ghats between roughly 700 and 1,600 metres. Elevation changes everything — higher and cooler means slower ripening and more flavour packed into the seed.

02Pick

Only the ripe ones.

Specialty picking means selecting cherry by cherry at full ripeness, by hand, over multiple passes through the season. It is slow, skilled work — and it is why the person picking matters as much as the plant.

03Ferment

Where the magic is decided.

The fruit is removed — or left on — and the seeds ferment for hours or days. Washed, natural, honey, anaerobic: these words on a bag describe exactly this step. Same cherry, different process, completely different cup.

04Dry

Weeks on raised beds.

ഉണക്കൽ

The seeds dry slowly on raised beds, turned by hand, protected from monsoon rain, until the moisture is exactly right. Rush this and everything before it is wasted.

05Mill

The parchment comes off.

മില്ലിങ്

Once dry, the seeds are hulled from their papery parchment, then graded by size and density and hand-sorted for defects. The quiet step where a lot earns its grade — before a roaster ever sees it.

06Roast

Minutes that reveal months.

വറുക്കൽ

A roaster takes the green seed and, in about ten minutes of heat, decides how much of the farm’s work you will taste. Specialty roasting aims to reveal the origin — not to bury it under darkness.

07Cup

Tasted, scored, argued over.

രുചിക്കൽ

Cupping is the standard tasting ritual: same recipe, bowls side by side, scored blind. It is how quality is agreed — and at Kerala Origins, the grower is at the table when their coffee is scored.
