Producer support · Understanding the coffee journey
Cherry to cup.
ചെറിയിൽ നിന്ന് കപ്പിലേക്ക്
A better cup begins long before brewing. For Kerala producers exploring specialty coffee, understanding each stage helps turn questions into practical improvements.
Talk about your coffee →Start with the farm and the lot
Kerala coffee is diverse. The useful details belong to a particular farm, harvest and lot, rather than one description for the whole state.
- Place
- Record the farm, region and growing conditions. Ask the producer for the elevation of the relevant plot.
- Coffee
- Identify the species and, where known, the variety. Our showcases have included Arabica, Robusta and Excelsa.
- Harvest
- Record when the coffee was picked. Timing varies with the location, weather and coffee grown.
- Processing
- Describe what happened to this lot, including any fermentation and drying steps.
- People
- Credit the grower and the people involved in processing, roasting and presenting the coffee.
- Tasting
- Keep the tasting notes with their context: the lot, roast and preparation used.
Begin with a healthy crop.
വളർത്തൽ
Coffee beans are seeds inside a fruit often called a cherry. Variety, soil, climate and the way a farm is managed all help shape the crop. Elevation is one part of that picture, rather than a quality grade on its own.
For a producer, a useful starting point is a clear record of the plot, the plants and the harvest being discussed.
Give ripeness careful attention.
വിളവെടുപ്പ്
Picking and sorting affect what reaches the next stage. Selecting suitable ripe cherries and separating damaged or unsuitable fruit can help a producer work towards a more consistent lot.
The approach needs to fit the crop and the farm. Careful handling and clear records make it easier to understand the result later.
Understand the process behind the name.
സംസ്കരണം
Natural coffees dry inside the cherry. Honey processes dry the depulped coffee with some mucilage retained. Washed processes remove the fruit and mucilage before drying the coffee in parchment.
Fermentation can be part of these routes. Terms such as anaerobic describe fermentation conditions and can sit alongside a natural, honey or washed process. A process name becomes more useful when the producer explains what was actually done.
Manage drying with care.
ഉണക്കൽ
Drying prepares coffee for safe storage and the next stages of handling. Producers may use raised beds, patios or mechanical systems, depending on their conditions and process.
Clean surfaces, protection from contamination and careful monitoring matter. Drying time varies; one fixed number of days does not describe every lot.
Prepare the green coffee.
മില്ലിങ്
Hulling removes the dried outer layers — husk or parchment, depending on the process. Sorting helps separate defects and prepare a more consistent green coffee lot.
Keep the lot identity intact through milling, storage and transport so the coffee can still be connected to its producer and process.
Roast to understand the coffee.
വറുക്കൽ
Roasting transforms green coffee and shapes what we taste. Sample roasting helps us explore a lot’s character and discuss it with the producer before deciding how to present it.
Bermito Coffee Roasters contributes this roasting experience as part of Kerala Origins’ founding team, working alongside the producer co-founders.
Taste, discuss and learn.
രുചിക്കൽ
Cupping is a structured way to compare coffees under similar preparation conditions. It creates space to describe aromas, flavours, texture and any concerns with a lot.
At Kerala Origins, tasting is also a conversation between producers, roasters, brewers and visitors. Feedback helps identify questions to explore and practical next steps.
For coffee producers
Bring your coffee. Bring your questions.
You do not need to have attended a Kerala Origins event to contact us. Tell us where you grow, what you are working on and where you would like support.
- Introduce your farm. Share your location, coffee and the question you want to work through.
- Discuss the next step. We will talk about suitable guidance, sample preparation, roasting or tasting, depending on your needs and what we can support.
- Keep learning from the lot. Use the conversation and feedback to decide what to record, compare or improve for the next harvest.
We agree the next steps with you before a sample is sent or work begins. The focus is on understanding and developing your coffee; outcomes depend on the lot and the work involved.
